Chafik from Chamoun's Rest Haven Restaurant, Clarksdale, Mississippi.

"How do you hold on to your Lebanese culture here in Mississippi, so far from home?"

Chafik: "We had lots of relatives here when we arrived in 1954. Many Lebanese were living here. We would always get together and have a party and speak the language with each other — kind of keep you in touch even though you are far away."

"How does it feel to share food from your home country in a place so different?"

Chafik: "Well, it's really great when people come here and enjoy our food. It gives us some satisfaction. It makes us thankful we can share good things with the fellow man — no matter where they are from."
