The Delta Supper Club kicks off tonight at historic Dockery Farms. Tickets are sold out — and this promises to be a meal for the ages. I had a chance to catch up with Chef David Crews yesterday while he was prepping for the event.
"Why is it important to share your culinary expertise with the region, especially since the Mississippi Delta isn't necessarily known for that?"
David: "You know, one of the greatest things we have in our region is the agriculture side of it. We might not be known for the best culinary experience, but we are known for the highest quality agriculture in the United States. We're getting the best product that you can have, whether it's okra, heirloom tomatoes or fresh basil. We have the land for it, and one of the things I like to do is showcase that. Don't church it up. Let the product shine through. We don't try and cover up the food, and that's what we're trying to do with this dinner."
